A juicy ripe blackberry essence woven with a touch of dark
cherry, fresh ground pepper and toasty oak envelops the nose. On the palate,
savor the fusion of Bing cherry and dark berries — boysenberry, black raspberry,
blackberry and a hint of huckleberry — with traces of dark cocoa and black
pepper. Bright acidity, supple tannins and toasted oak caress the palate to
create a mouthwatering sensation. Slightly chewy when first opened, this robust
blend mellows with a little time to breathe.
A great wine to open when enjoying bison burgers and sweet
potato fries, or oxtail stew served with fresh buttermilk biscuits and honey
butter.

Winemaking: The grapes were hand-harvested and fermented with
native yeast. The resulting wine was
aged for 18 months in French oak barrels and bottled unfined.
