Intense aromas — reminiscent of a cellar at the height of
harvest — fill the nose with hints of savory herbs, loamy earth, oak and dark
berries. On the palate, the richness of ripe Bing cherries help to tame the
chewy oak and tannic structure on this hearty Cab Franc. Threads of cedar weave
through the wine creating a spicy essence, while traces of luscious mocha and
vanilla appear as the wine opens. If opened before mid-2024, decant or open at
least 30 minutes before serving.
A versatile wine for pairing with meals, try enjoying it
with ginger and scallion beef over brown rice, or buttered black pepper bison
steaks served with oven-baked sweet potatoes fries.

Winemaking: The grapes were hand-harvested and fermented with native yeast in open top fermenters. The resulting wine was aged for 18 months in French oak barrels and bottled unfined.
