The grapes were hand-harvested and fermented with native yeast in open top fermenters. The resulting wine was aged for 20 months in French oak barrels and bottled unfined.
An intriguing nose of brambly blackberry, Queen Anne cherry and red currant merges with hints of freshly ground white pepper, fine herbs and oak. A bright entry reveals buoyant acidity wrapped around a core of English Morello cherry and pomegranate juice with hints of blueberry, cedar and loamy earth appearing mid-palate.
A juicy steak is always an excellent pairing with this Cabernet. Try a slice of medium-rare tri-tip, or a Prosciutto and rosemary stuffed flank steak served with creamy scalloped potatoes.
