The grapes were hand-harvested and fermented with
native yeast in open top fermenters. The
resulting wine was aged for 30 months in Taransaud barrels and bottled unfined.

from the first whiff to the lingering finish, this complex, layered Cabernet
provides pleasure now, or can be cellared for future enjoyment. Aromas of ripe
brambly blackberry mingle with mocha-infused oak and hints of citrus and black
licorice. A concentrated blend of black currant, plum and dark cherry appears
in the creamy entry. Traces of cocoa, sassafras and minerality join in
mid-palate adding depth as the wine broadens and flows into a long silken
finish.
Focused
with muscular edges, this wine deserves to be paired with delicious robust fare
like bacon-wrapped filet mignon, or crown roast of pork with an onion and herb
stuffing.
